Paris
You will make different desserts using choux pastry: chocolate éclairs, Paris-Brest, petit choux, as well as the creams that accompany them: pâtissière, mousseline, praline, chantilly, you will learn to make icings and crackers and will make the montages of these pastries. You will discover the history of Paris-Brest and many other cultural anecdotes around these desserts. We will discuss the history of French pastry and the major trends that have spanned the ages. A workshop that combines practice and pastry techniques with the cultural dimension of the culinary arts.
