The basic menu is only an omakase course consisting of 18 dishes, including 5 a la carte dishes, 12 pieces of sushi, and dessert. Good sushi starts with good ingredients. The owner himself visits the Toyosu Market every morning to carefully select and use the best fish of the season. With the experience and ties he has cultivated over the years, he procures the finest ingredients to rival even the most famous restaurants in Ginza.
The “Karin-maki” served at the end of a specialty meal. It is a luxurious sushi roll filled with fatty boiled eel and thickly baked egg. The “Nerikan” seasoning, made by chopping kanpyo and shiitake mushrooms and simmering them in a sweet and spicy sauce, adds depth to the flavor.
