In a long-established Japanese restaurant that is difficult to reserve, the
owner and chef who has been awarded Michelin stars for more than 10
consecutive years will personally explain the Japanese cuisine "umami" related
to the Kansai dashi culture, and let you enjoy the kaiseki cuisine related to
it. The entire trip takes 3 hours (1 hour for the experience and 2 hours for
the meal). You can choose your favorite package to experience

The owner and chef will teach you how to make dashi, the foundation of "umami"
that is indispensable in Japanese cuisine.

And try several dashi soup stock made from a variety of different ingredients
to taste the difference in "umami" (savory flavor).

For meals, we serve authentic Japanese set meals prepared by the chef using
homemade dashi.


  • Taught by Michelin chef himself! A surprising journey of the secrets of umami ※You can ask the staff to take photos of the experience with your phone or other device ・Explanation on the "umami" of Japanese cuisine (the umami that is a characteristic of Japanese cuisine, types of dashi)

    ・Instructions on the ingredients for the soup stock (a variety of ingredients,
    including kelp, dried bonito, dried shiitake mushrooms, sea bream bones,
