The chef, who upholds "good old-fashioned French cuisine," went to France to
learn the essence of French cuisine and trained at a number of restaurants
before opening his own restaurant.
His specialties are foie gras poiret and braised conger eel, and he
substituted sansho(Japanese pepper) for pepper in the poivrade sauce to create
a unique dish.
The restaurant's name means "related" or "connected." "LIAISON" connects
classic recipes with Japanese ingredients, past and present.
"LIAISON" has been awarded one Michelin star.
