Once filled, it is closed and then heated so that the ingredients release their flavors inside the bread. There are two types of chapati: the classic chapati found mainly in the capital Tunis and in the north and the so-called Mahdia chapati, present throughout the Sahel region. The latter is not round but has a shape similar to a calzone. In addition to its shape, the ingredients that make up the dough are also different from its northern Tunisian version. You can recognize the dough by its sticky texture.
