Shunpanro in Shimonoseki, Yamaguchi Prefecture, was founded in 1888, it was the first restaurant in Japan to be officially licensed to serve fugu (blowfish) cuisine by the first Prime Minister, Hirobumi Ito.
The Tokyo branch offers the same traditional taste and artisanal techniques that have been handed down since then.
The delicate thin slices of sashimi, which require a highly skilled artisan's technique, are made by assessing the quality of each individual blowfish to bring out its exquisite flavour and texture. The fish is then arranged in traditional Japanese crafts such as Arita and Ko-Imari ware to resemble a chrysanthemum flower.
This plan is all about torafugu, and includes our signature torafugu milt and grilled fugu.Each guest will also receive a glass of Yamaguchi sake from a choice of fin sake or otter sake, depending on their preference.
