TOUAN
tasting room is called “Touan” -- a hermitage for the toji and our guests.
“Yojohan”(typical size of tearoom) sized counter for service, plaster walls, and seasonal scenery outside the window,
you can enjoy a new experience of sake and food in a quiet space reminiscent of a tearoom.
NOGUCHI NAOHIKO SAKE INSTITUTE
located in Kanagaso, Komatsu City is a mountain village with beautiful nature.
ear the top of Mt. Kananbo, from which the name Kanagaso comes, there is a statue of “Kannon” (the Goddess of Mercy in Buddhism), and the brewery is facing Mt. Kanabo. Under the watchful eye of “Kannon”, who is said to be an incarnation of water, the sacred mountain of Hakusan, with its subsoil water gushing forth, is used as brewing water to produce the sake of Mr. Naohiko Noguchi, who is also known as “the god of sake brewing.
Tasting Details
This course includes a tasting of Naohiko Noguchi's best Limited Edition
5 sakes tasting and gallery viewing.
The tasting will be held in the exclusive tasting room, Toan, which is modeled after a tea ceremony room.
The total amount of sake is equivalent to about 150ml.
We will prepare snacks that go well with the sake.
Mr. Naohiko Noguchi
Mr. Naohiko Noguchi became a toji (Master Brewer) at the young age of 28, and is regarded as one of the Four Guardians of Heaven by the Noto Toji Guild. He was a key figure in the revival of the nearly lost yamahai brewing method and has been brewing sake for over 70 years with the desire to "make good sake and make people happy.” The NOGUCHI NAOHIKO SAKE INSTITUTE was established by a man who fell in love with the spirit and skill of Naohiko Noguchi and wanted to preserve his way of life for the future.
