  • The gold leaf mabushi box is a sumptuous hitsu-mabushi dish made with an abundance of gold leaf from Imai Kinpaku, a long-established gold leaf company in Kanazawa that has been in business for more than 100 years. The weight (container) is also made of Imai gold leaf and is an original container.
  • The dish is served with Munagi's original chopsticks, which you can take home with you.

  • There are several theories regarding the origin of hitsumabushi.
  • One theory suggests it was originally created as a staff meal at restaurants. Another suggests that when unagi rice bowls were ordered for delivery and shared among several people, the grilled eel could not be divided evenly, so it was finely chopped to allow everyone to enjoy an equal portion.
  • As for eating it as ochazuke (with broth or tea), one theory says this style was adopted because staff meals needed to be eaten quickly, while another suggests it was served as a refreshing, easy-to-eat finale to banquets.
  • It is also believed that because ceramic bowls used for delivery were often broken, large and sturdy wooden tubs (ohitsu) came to be used instead. From this practice, hitsumabushi—served in an ohitsu—may have been born.
  • Hitsumabushi is traditionally served as a complete set including an ohitsu, rice bowl, clear soup, pickles, condiments, and dashi broth.
  • In addition to enjoying the grilled eel with rice, we invite you to try different styles—adding condiments or finishing with ochazuke—to fully experience its versatility.

  • This is our most popular menu item. This is an excellent dish that allows you to fully enjoy the Nagoya speciality hitsu-mabushi. You can enjoy the different tastes of Hitsu-mabushi at once, with the upper tier being "Shiroyaki-mabushi"（White)and the lower tier being Hitsu-mabushi(Red).
  • The set comes with soup, pickles, pickled radish, wasabi, arare (arare), nori (seaweed) and soup stock. Please fill your bowl with eel and rice and enjoy in various arrangements.

Highlights

Each eel is carefully char-grilled and served with a tried-and-tested homemade sauce. The intensity of the fire, the degree of grilling and the timing of sauce application are varied to suit the individuality of the eel. The rice used is Japanese Brand rice Koshihikari from Fukui Prefecture, which is millead and cooked in-house every day. Private and semi-private rooms are available. Please enjoy our carefully selected eel to your heart's content.
