Hirata Sake Brewery
Hirata Sake Brewery is a renowned sake brewery located in the charming old town of Takayama, Gifu Prefecture, Japan. With a history stretching back to the Edo period, it's one of Takayama's venerable establishments.
The current roots of Hirata Sake Brewery are in Ise and Hida. Carefully selected famous brewer’s rice ‘Yamadanishiki’ and local rice varieties such as ‘Hidahomare’ from Hida and ‘Isehikari’(miraculously born from the rice fields of Grand shrine, Ise) are used. The fine water comes from the sparkling clear Miyagawa stream.
The holiness of Ise - the source of Japanese spiritual culture and the distinct advantage of Hida with its severe winters and rich tradition of sake making brings forth a fine range of exquisite sake. That is Hirata Sake Brewery.
