They turned their orchard into a vineyard, planted Pinot Gris, Pinot Auxerrois, and Gewurztraminer from Alsace in 1976, and became the first to grow Pinot Gris in Canada. Named with a nod to George’s Austrian roots, Gray Monk opened in 1982 with a modest 125-case vintage made in a garage.
