“Let the dogs bark, Sancho. It’s a sign we are on track”. So said the most famous resident of Toledo, although a fictional one. This is the capital of the Castile-La Mancha region where Don Quixote roamed in the famous Cervantes novel. On it’s granitic hill, it has evidence of Roman, Moorish and Spanish occupation, and is a UNESCO World Heritage Site for evident reasons.
