Every morning, we visit Toyosu to carefully select and purchase ingredients.
This uncompromising attitude is something we learned from our previous experience of accompanying famous sushi restaurants on their purchasing trips. This experience and connection allows us to prioritize the purchase of high quality ingredients.
The omakase course, prepared by the owner, who has studied at both sushi restaurants and Japanese restaurants, consists of sushi and a la carte dishes that reflect the season.
The final dish is the “Karin maki,” a thick roll of eel cooked with a thickly-boiled egg.
This is a specialty that has been perfected through years of trial and error.

The basic menu is only an omakase course consisting of 18 dishes, including 5 a la carte dishes, 12 pieces of sushi, and dessert. Good sushi starts with good ingredients. The owner himself visits the Toyosu Market every morning to carefully select and use the best fish of the season.
